A taste of spring.
This spring we see a return to some classic hues, such as apple green, coral pink and turquoise. The palette brings to mind the senses of spring, like fresh fruits, saltwater and sun-kissed seas.
Watermelon Fetta Salad
Ingredients:
- 5 cups cubed watermelon
- 1 heaping cup diced cucumber
- ¼ cup thinly sliced red onions
- ⅓ cup crumbled feta cheese
- ⅓ cup fresh mint or basil leaves
- 2 tablespoons extra-virgin olive oil
- 3 tablespoons lime juice
- 1 garlic clove, minced
- ¼ teaspoon sea salt
Instructions:
- Make the dressing: In a small bowl, whisk together the olive oil, lime juice, garlic, and salt.
- Arrange the watermelon, cucumber, and red onions on a large plate or platter. Drizzle with half the dressing.
- Top with the feta, mint, and salt, if using. Drizzle with the remaining dressing. Season to taste with salt and pepper.
- Serve immediately.
French Apple Tart
Ingredients:
- 1 sheet puff pastry, thawed
- 2 large Gala apples, peeled, cored, and sliced thinly
- ½ cup brown sugar
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
Instructions:
- Preheat oven to 200°celsius.
- On a lightly floured surface, roll out the puff pastry to a 12-inch circle.
- Transfer the pastry to a 9-inch tart pan with a removable bottom.
- In a large bowl, gently toss together the apples, brown sugar, lemon juice, and cinnamon.
- Layer the apple mixture into the prepared tart crust. Make sure the pieces overlap slightly.
- Bake in the preheated oven for 30-35 minutes, or until the apples are tender and the crust is golden brown.
- Remove from pan immediately and let cool slightly before serving.
